Lentil Crunch Wraps

A few years ago, for the entire month of May we challenged ourselves to make a healthy, flavourful dinner, under $5/portion, every single night for the month. And it was a big success! One item that everyone wanted the recipe for was our Lentil Crunch Wraps! I don't typically cook like I bake, and often just throw things together until it ends up the way I want it. When making these, I documented a bit of the process so you can recreate these in your own kitchen!  Make a whole batch of 8, or double it up and have plenty for lunches throughout the week. Super yum, super simple! It isn't an exact recipe below, but with your own better judgement, and added flare, you can make them your own!

Method

Start by cooking 1c of Lentils with 3c of Water or your Stock of Choice. We had Beef Stock in the fridge, so that's what we used. 1c of Lentils will provide enough to make 8 Crunch Wraps. Season with a premade taco seasoning, or add in your own flavours..like chili powder, cumin, smoked paprika, oregano, S+P. You can either make them one at a time, or lay the tortillas out on the counter and make them all like an assembly line. Put a big scoop of the lentils in the middle of each tortilla. If you're able to find the Jumbo Tortillas, they work best. We only have regular bois lying around, so we used them and they're a bit smaller. Top with a sprinkle of shredded cheese. Or go the extra mile and google up a Magic Bullet Nacho Cheese Sauce! Dollop on if you do so! Break 1 tostada in half and place it on the lentils and cheese, so that it covers it entirely and acts as a crunchy layer between your bottom and your top, toppings. Top your tostada with a sprinkle of your flavour choices. We went for: diced red onion, chopped tomato, red pepper, and a few slices of avocado. Top with a dollop of sour cream. Fold the sides of the tortilla up, all around your fillings to make a yummy little crunch wrap parcel. Pop into a hot, oiled frying pan and sear on both sides until golden brown and crisp, 3-4 minutes. Try to have just one. Your brain will want you to say yes, while your belly is telling you no. Enjoy!
