Charred Corn Black Bean
Salad

Serves 4-6 as a lunch, or 6-8 as a side
Time: 30 minutes

A large white ceramic bowl with a colourful salad comprised of beans, corn, cheese, red onion, and peppers.

A light, yet hearty salad that is full of bright, fresh flavours. Amazing on its own, or rounds out a yummy summer meal as a side.

Ingredients
1 can black beans
2c corn kernels
1/2 medium red onion, diced
1c halved cherry tomatoes
1 jalapeno, finely diced
1c cubed cheddar cheese
1/4c cilantro, chopped

Vinaigrette

1 limed, juiced
1/3c vegetable oil
1/4t chipotle powder
1/4t smoked paprika
1/2t chili powder
pinch salt and pepper

Method

In a frying pan with 2T oil, cook the corn kernels over high heat until they begin to char 5-8 minutes. Place all of the ingredients in a nice bowl. Combine all of the vinaigrette ingredients in a jar and give it a good shake! Pour the vinaigrette over the salad ingredients and give everything a little toss. Enjoy!
