Peanut Butter Popcorn Marshmallow Bars
Y: 12x12" cake square cake pan
(You can always choose a different size, but your squares
will just be thicker, or thinner, depending)

40g gelatin sheets
264g water i
88g water ii
105g sugar
720g brown sugar
206g honey (or you can use corn syrup)
a big spoon of peanut butter
half a cup-ish of chocolate chips
200g corn kernels, popped in a pot/popcorn maker, or about 8c popped corn
Pull apart the gelatin sheets so that they aren't glued to each other. Place them all, one at a time into a container that is large enough to hold them and the water i. Let them sit until the gelatin is bloomed - or softened completely. Put all of it (gelatin, and water i included) into the bowl of a Kitchenaid with the whisk attachment. In a pot, combine the water ii, sugar, brown sugar, and honey. Bring to a boil without stirring. Continue to cook until the mixture reaches 252F. Pour the hot sugar honey syrup over the bloomed gelatin and water. Turn the mixer on medium low and whisk until it starts to cool down and thicken slightly. Once it starts to thicken and not splash around the bowl, turn the speed up and whisk until the mixture is at a ribbon stage, or it holds it's shape when you pull the whisk up and drape it over the marshmallow. The design should hold for just a couple of seconds. While your marshmallow is whisking away, line your pan with plastic wrap. Spray liberally with a non-stick spray. With the mixer running, whisk in the peanut butter, chocolate chips, and popcorn. Whisk just until combined. If you whisk and whisk the mixture, the marshmallow will start to set in the bowl and it will be very thick and tricky to get out of the bowl. Once everything is combined, scrape it all out into your plastic lined and sprayed pan. Give the top a quick spray and cover with plastic. Let sit at least 4 hours at room temperature to firm up before portioning into the bar size you desire. Store in an airtight container at room temperature for a couple weeks, or til they're gone!
**Make sure you don't forget to spray that plastic wrap. Otherwise, marshmallow and plastic will become one and it is nearly impossible to remove the plastic from the marshmallow!**
